Being a special needs parent has its challenges. However, my Bumblebee eating various foods isn’t one of them. We’re blessed that he’s not stuck on chicken nuggets but at the same time, his tastes are getting a bit fancy ($$$) for us. Lol. Below is one of his favorites. Salmon & Mango Salsa is super quick and TASTES so good, you’ll think you’re cheating. 😉
Seared Salmon and Mango Salsa
Prep time: 10 min. / Cook time: 10 min. Total: 20 min.
four 4-oz. salmon fillets
Salt and Pepper to taste (I prefer Pink Himalayan Sea Salt)
For Mango Salsa:
2 mangos, diced
1/2 red pepper, diced
1/2 red onion, diced
1 small jalapeño, seeded and chopped
1/4 cup packed cilantro leaves chopped
Juice of 1 lime
1. Preheat oven to 350.
2. In a medium bowl stir together mangos, red peppers, onions, jalapeños, and cilantro. Set aside until ready to use. This gives the flavors time to marry. TASTES AMAZING.
3. Sprinkle salt and on each filet. Lightly press spices into salmon fillets. Sear over medium heat for 2-3 minutes on one side. Flip. Immediately place in oven for 5-6 minutes or until fish is opaque.
4. Squeeze fresh lime juice over salmon, top with mango salsa. Devour.
